How these calculators work
Baker's percentages
Bakers describe a formula by comparing each ingredient to the weight of the flour, which is always 100%. A dough with 500 g flour and 350 g water is 70% hydration. Sourdough starter contains both flour and water: enter its weight and hydration, and the calculator splits it into flour and water so the totals come out right.
Recipe scaling
The scaler multiplies every amount by the ratio of the new yield to the original. Ingredient weights scale reliably; things like salt, spices, leavening, baking time, and pan size don't always scale in a straight line, so treat large jumps with care.
Homebrew ABV
Alcohol by volume is estimated from how much the gravity dropped during fermentation. The standard formula is (OG − FG) × 131.25. A second formula, often used for stronger brews, corrects for the way the estimate drifts at high gravity. At normal gravities the two agree closely; above about 1.075 they diverge and the second is generally considered more accurate. Apparent attenuation shows how much of the sugar was fermented.
Frequently asked questions
What counts as "flour" in baker's percentages?
All the flours in the formula — bread flour, whole wheat, rye — added together. Choose the "Flour" type for each one. Add starter separately so its own flour and water are counted.
What hydration should my dough have?
It depends on the bread. Sandwich loaves are often in the 60s, many artisan loaves in the 70s, and very open, wet doughs higher. Use the calculator to compare formulas rather than as a target.
Why is baking measured by weight?
Weight is far more consistent than volume, because a cup of flour can vary by 20% or more depending on how it's packed. That's why this calculator works in grams.
Does the ABV calculator work for wine, cider, and mead?
Yes — it only needs the starting and finishing gravity, so it works for any fermented drink measured with a hydrometer. Very sweet or very high-alcohol drinks are the least precise.
How accurate is the ABV estimate?
It's an estimate. Errors in your gravity readings, temperature, and unfermented sugars all affect the result, so expect it to be close rather than exact.
